D – devilled eggs


Yeah, right. So it was easter over the weekend and I have this serious affinity for eggs. I went out on a gourmet limb with my little devils and used a recipe (So Southern!) for Pimiento Cheese Eggs. Seriously. I can’t even say if I ever ate pimiento cheese before or not, but now I have.

6 hard cooked eggs, cut in half, yolks removed and mashed in
bowl
1/4 cup finely shredded sharp cheddar
1 T finely diced pimientos
2 T olive oil mayo
2 t dijon mustard
1 T finely diced sweet onions (Vidalia or Walla Walla type)
salt and freshly ground black pepper to taste
paprika for garnish (or a pimiento!)

combine thoroughly the mashed yolds, with cheddar, pimiento, mayo, mustard and onions. Salt and pepper to taste. I piped them into the egg whites with a pastry bag and star tip but a spoon works too.
Dust on paprika or lay on a pimiento.

C – Cuban


how I love Cuban. Growing up I was more of a Chinese and New Mexican/Mexican enthusiast and lived in places rich in those cuisines. Living in central Florida presents lots of options previously more or less unknown to me…Puerto Rican, Dominican, Jamaican…Cuban. I love Cuban food. It is simple and largely made of ingredients that are readily available. I’ve eaten in both dives and more disneyfied versions and I love the lime soaked beef with parsley and raw onions alongside cuban and medianoche sandwiches and maduros. Tonight we attempted it at home to a crazy smoky house and amazing results.

road trip


yesterday I had the bright waking idea to look up Red Robin and see if there was any progress made towards opening restaurants in Florida. I was surprised to see that one had opened in Port Orange, a small town just south of Daytona, maybe an hour or so from home. I am not sure what even prompted the look. Z says craving? I think it could be that. It isn’t really the food, which I like, but I think the idea that I went there for years with my family and they continue on. I am kind of interested in Honeybaked ham too lately so it must be the same thing.
Last night we got home around 5:30 with no immediate plans for dinner and a looming three day weekend. Z said, ‘Let’s head to Red Robin then…’ So we did.

falafel fail

have you ever noticed that everyone writes about their successes. I am here to tell you I made (ok, tried) to make falafel tonight and wow, I bombed! Total dinner fail. I made sauce from scratch and had na’an and feta ready to go alongside my favorite spicy hummus. We’ll be looking for a good middle eastern restaurant in Orlando if you know of one.
